This black bean, sweet potato and quinoa salad recipe was easy to make and so delicious.

This salad recipe is full of protein, healthy carbohydrates and fat, therefore it will keep you feeling full and satisfied.

Black Bean Sweet Potato and Quinoa Salad Recipe

Ingredients

  • 1 large swwet potato, diced
  • 1 can black beans, drained
  • 1/4 cup purple onion, finely diced
  • handful cilantro, diced
  • 1/2 red pepper, diced
  • 1/2 cup cooked quinoa
  • 1 clove garlic, diced
  • olive oil
  • sea salt
  • lemon or lime juice
  • 1/2 tsp cumin
  • 1 avocado

Directions

  1. Place cubed sweet potato on parchment lined cookie sheet, drizzle with olive oil and roast for 20 minutes. Let cool
  2. In a small food preocessor mix some olive oil, lemon or lime juice, sea salt, garlic, cumin and cilantro and mix well.
  3. In a larger bowl mix all ingredients together except avocado. Toss and let marinate in the fridge for a few hours or overnight
  4. Just before serving, add chopped avocado.
