I have been making this creamy cauliflower, leek, carrot soup all winter and it is one of my favourites.

It is easy to make and simply deliccious and even my husband loves it and he is not a fan of creamy soups. This creamy cauliflower, leek and carrot soup is also dairy free.

Ingredients

  • 1 small cauliflower, chopped into florets
  • 2 medium carrots, chopped
  • 2 small leeks, chopped
  • olive oil
  • sea salt
  • 8 leaves of fresh basil
  • water or vegetable stock

Directions

  1. In a soup pot place a good drizzle of olive oil
  2. Add in cut up leeks and carrots
  3. Cover pot with about 4- 5 cups of water or stock and bring to a boil for a few minutes
  4. Add in some salt to taste. I also like to add in Herbamare organic herbed sea salt
  5. Add in cauliflower and simmer for a few minutes until cauliflower is almost soft
  6. Add in basil and turn off stove. Let sit for a few minutes
  7. Puree soup in a blender or with a hand held blender
